Glion มีโปรแกรมการเรียนการสอนที่ให้เด็กนักเรียนได้เข้าใจถึงหลักทฤษฎีและภาคปฏิบัติไปในตัวพร้อมๆกัน Glionมีอาจารย์ที่มีประสบการณ์การทำงานจากการโรงแรมมาเป็นเวลานานได้ถ่ายทอดการเรียนแบบทฤษฎี โดยอาศัยการเล่าเรื่องประสบการณ์ จึงทำให้เด็กนักเรียนได้เข้าใจถึงปัจจัยที่แท้จริงของการทำงานในโรงแรม ซึ่งโดยส่วนตัวแล้วทำให้เกศรู้สึกกระตือรือร้นมากกว่าเรียนตามตำราในหนังสือเรียนแบบวิชาการของมหาวิทยาลัยทั่วๆไป ยิ่งกว่านั้น ในห้องเรียนมีการจัดเด็กเพียงจำนวน 15-20 คน เพื่อที่จะทำให้อาจารย์ได้เข้าถึงนักเรียนได้มากขึ้น ตลอดจนมีการสนทนาแลกเปลี่ยนความคิดเห็นกันอยู่เรื่อย ๆ สม่ำเสมอ   เด็กนักเรียนจึงได้เรียนรู้ที่จะเคารพความคิดเห็นของเพื่อนคนอื่นๆ   อีกทั้งในห้องเรียนมักจะมีรายงานที่จัดให้เด็กนักเรียนได้ทำงานเป็นกลุ่ม ทำให้เด็กนักเรียนได้เรียนรู้ที่ทำงานร่วมกับผู้อื่น และได้เรียนรู้การทำงานกับตัวเองอีกด้วย โดยส่วนตัวแล้วเกศรู้สึกว่าการได้ฝึกฝนทำงานกับผู้อื่น ทำให้เกศพร้อมมากขึ้นที่จะทำงานจริงในองค์กรของโรงแรม เพราะงานโรงแรมไม่มีใครที่จะสามารถทำงานคนเดียวได้ เนื่องจากทุกแผนกจำเป็นต้องทำงานด้วยกัน เพื่อที่จะทำให้โรงแรมนั่นๆมีศักยภาพมากยิ่งขึ้นไป

เกศอาจจะพูดถึงเรื่องการเรียนแบบทฤษฎีไปแล้วในเบื้องต้น พอมาถึงภาคปฏิบัติ เกศก็ยิ่งสนุกขึ้นไปใหญ่ ทางโรงเรียนได้จัดโปรแกรมสำหรับฝึกฝนนักเรียนตั้งแต่เรียนปีแรก เพื่อให้มีความเตรียมพร้อมในการฝึกงานในโรงแรมจริงๆ ซึ่งนักเรียนทุกคนต้องฝึกงาน 2 ครั้ง ครั้งละ 6 เดือน เพื่อเพิ่มพูนประสบการณ์ให้เตรียมพร้อมสำหรับการทำงานจริงๆ

นอกจากนั้นก็ยังมีการฝึกฝนในโรงเรียนในแต่ละวัน ทั้งในร้านอาหารของโรงเรียน เพื่อให้นักเรียนได้เข้าใจหลักพื้นฐานในการเสิร์ฟและโปรแกรมที่โรงแรมห้าดาวใช้เช่น Micros รวมไปถึงการจัดเตียงนอน ทำความสะอาดห้อง และ ประชาสัมพันธ์ งานเหล่านี้อาจจะไม่ได้มี position ที่สูงมากนักในการทำงานจริง   แต่การที่จะขึ้นมาเป็นผู้บริหารที่ดีในอนาคตได้นั้น ความเข้าในหลักพื้นฐานของโรงแรมในแต่ละแผนกมีความสำคัญมาก เมื่อมาถึงการหาโรงแรมฝึกงานนั่น ข้อดีของการเรียนที่ Glion ทำให้โรงแรมหลายๆแห่งทั่วโลกต่างเชื่อใจในศักยภาพของโรงเรียน  โรงแรมลำดับห้าดาวจำนวนมากมาคัดเลือกเด็กนักเรียนถึงโรงเรียนเพื่อที่จะได้ฝึกงานกับโรงแรมเหล่านั้น เด็กนักเรียนเกือบทุกคนจะได้รับข้อเสนอจากโรงแรมคนละมากกว่า2-3แห่ง

เกศเองก็ได้มีโอกาสฝึกกับMandarin Oriental Singapore ที่ประเทศสิงค์โปร์เป็นเวลา 6 เดือน โดยเกศได้ทำงานในด้านจัดเลี้ยง และทำงานแต็มเวลาที่ร้านอาหารอิตาเลี่ยน Dolce Vita ซึ่งเป็นร้านอาหารระดับ Michelin Star การฝึกงานครั้งนั้น ทำให้เกศได้เข้าใจการทำงานในโรงแรมจริงๆมากขึ้น และได้ตอบโจทย์คำถามของตัวเองว่าการโรงแรมเป็นอะไรที่เกศชอบจริงๆ หรือไม่ การทำงานเป็นเด็กฝึกงานในโรงแรม ฝึกความอดทนกับตัวเองค่อนข้างมาก และฝึกความรับผิดชอบในหน้าที่การงาน และทำให้เกศมีความคิดเป็นผู้ใหญ่มากขึ้น

ที่สำคัญที่สุดก็คือ ทำให้เกศได้พบปะคนที่ทำงานอยู่ในองค์กรการโรงแรมเหมือนกัน ทำให้เกศได้เรียนรู้ประสบการณ์ของคนอื่นๆ มี connection มากขึ้น เผื่อว่าในอนาคตหลังจากที่เรียนจบแล้ว ก็จะสามารถทำให้เรามีโอกาสสูงในการเข้าไปทำงานเป็นfull-timeเต็มเวลา ได้อย่างง่ายมากขึ้น เมื่อการฝึกงานครั้งแรกผ่านไป การฝึกงานครั้งที่สองของเกศที่ Phulay Bay A Ritz Carlton Reserve ที่จังหวัดกระบี่ก็ทำให้เกศเข้าใจหลักการการทำงานของโรงแรมได้ง่ายดายยิ่งขึ้น แม้จะฝึกคนละแผนกกับการฝึกงานครั้งก่อน ครั้งนี้เกศฝึก Finance ได้มีโอกาสลองเปลี่ยนจากงาน Operations มาเป็น Administration ดูบ้าง จะได้เปรียบเทียบดูว่าอันไหนที่เหมาะกับเรา และที่สำคัญไปกว่านั่นคือเกศได้เข้าใจลึกซึ้งว่างานเอกสารกับงานที่พบปะลูกค้าโดยตรงมีการเชื่อมโยงกันอย่างไรบ้าง การที่ฝึกหลายๆแผนกก็จะทำให้เราเข้าใจโรงแรมมากขึ้น และที่สำคัญความรู้ที่ได้จากแต่ละแผนกนั่นย่อมทำให้เราเข้าใจแผนกอื่นๆมากยิ่งขึ้นด้วยนอกเหนือการเรียนการสอนในโรงเรียนและทำงานเรียนรู้จากประสบการณ์จริงอันเป็นเอกลักษณ์ของGlionซึ่งไม่เหมือนสถาบันไหนแล้ว เพื่อนๆที่เรียนที่มหาวิทยาลัยเดียวกันก็แตกต่างในเชื้อชาติและวัฒนธรรม เพราะเด็กนักเรียนทุกคนล้วนมาจากหลายประเทศทั่วโลก ทำให้เกศได้มีเพื่อนจากประเทศต่าง ๆ  เกศจึงได้เรียนรู้เกี่ยวกับวัฒนธรรมอันแตกต่างหลากหลาย เป็นสิ่งที่ดีที่เตรียมพร้อมเกศในการทำงานในโรงแรมอีกด้วย

เพื่อนที่มาจากหลากหลายประเทศก็จะได้สามารถทำงานกลุ่มด้วยกัน ได้แลกเปลี่ยนประสบการณ์ความคิดเห็น งานการโรงแรมถือได้ว่าเป็นงานที่ได้พบปะผู้คนจากทั่วทุกสารทิศ การที่เรามีความรู้พื้นฐานในแต่ละวัฒนธรรมก็จะทำให้เรามีการสนทนาและเข้าถึงผู้อื่นได้ง่ายดายมากขึ้น นอกจากนั้นโรงเรียนมักจะจัดกิจกรรมหลังเลิกเรียนหรือในช่วงวันหยุดให้กับนักเรียน เช่น สกี ไปเที่ยวในเมืองอื่นๆของประเทศสวิตเซอร์แลนด์ และเยี่ยมชมเยี่ยมชิมอาหารขึ้นชื่อของเมืองเช่น Cheese Fondue รวมไปถึงได้ไปเที่ยวประเทศเพื่อนบ้าน เช่น ฝรั่งเศส อิตาลี เยอรมันก็สะดวกสบายในการเดินทางโดยรถไฟเพียงไม่กี่ชั่วโมง กิจกรรมเหล่านี้ทำให้เกศและเพื่อนๆได้มีอะไรทำในช่วงวันหยุดสุดสัปดาห์ และเป็นอีกหนึ่งวิธีที่ช่วยให้เราได้พบเจอเพื่อนใหม่ๆ และได้เรียนรู้วัฒนธรรมเหมือนที่ได้กล่าวมาในตอนต้น

Les Roches Jin Jiang lends itself to a wonderful learning environment, at the Fen Xian campus of Shanghai Normal University in southern Shanghai. เล่าชีวิตความเป็นอยู่ระหว่างเรียน

Les Roches แชร์แคมปัสกับมหาลัยจีนแห่งหนึ่ง ย่านนักศึกษา อยู่ห่างจากตัวเมือง 30-45นาทีโดยประมาณ การเดินทางสะดวก เพราะมีทั้ง taxi, รถบัสของโรงเรียนที่เข้าเมืองทุกวันศุกร์ เสาร์ และวันอาทิต, รถเมล์, และ รถไฟฟ้าใต้ดิน นักศึกษาส่วนมากจะเข้าเมืองกันเป็นกลุ่มโดยการแชร์รถ taxi
การเรียนที่โรงเรียนนั้นใช่ภาษาอังกฤษเป็นหลัก ส่วนหนังสือที่ใช้ก็เป็นแบบเดียวกับที่ใช้ที่แคมปัสที่ Switzerland ส่วนใหญ่ ที่ต่างกันก็ตรงที่ตารางการเรียนและวิชาบางตัวเท่านั้น
นักเรียนต่างชาติส่วนจะพักหอนอกที่ทางโรงเรียนจัดหาไว้ให้ เป็นโรงแรมขนาดเล็กที่มีอุปกรเครื่องใช้ครบครัน ทั้งยังมีแม่บ้านทำความสะอาดห้องและเปลี่ยนผ้าเช็ดตัวให้ทุกวันอีกด้วย
ส่วนเรื่องอาหารการกินนั้นโรงเรียนจะจัดหาไว้ให้ 2 มื้อทุกวัน วันจันทร์ถึงวันศุกร์ มื้อเช้าจะเป็น Western style buffet ส่วนกลางวัน จะเป็น มีให้เลือกระหว่าง Western food และ Asian food (Thai, Indo, Chinese, ect.) มีเป็นแบบ a la cart, set menu, และ buffet แถบย่านแคมปัสและโดยรอบหอพักมีร้านค้า ร้านอาหาร อยู่เยอะพอสมควร จึงไม่จำเป็นต้องเข้าเมืองบ่อยๆ สะดวกและไม่ต้องเป็นห่วงเรื่องอาหารเย็นอีกด้วย

ความประทับใจกับเพื่อน ๆ ในชั้นเรียน/ โรงเรียน
สิ่งที่ประทัปใจที่สุดเกี่ยวกับการเรียนที่นี่คือความเอาใจใส่ของอาจารย์ในทุกๆด้าน ไม่ว่าจะเป็นด้านการเรียนหรือแม้กระทั้งเรื่องส่วนตัว การแก้ปัญหาและคำแนะนำในขณะฝึกงานและขณะที่เรียนอยู่ คำแนะนำมากมายเกี่ยวกับการใช้ชีวิตในแง่การวางตัวในธุรกิจการโรงแรมและการบริหารคนในองค์กรณ์ ทั้งการชี้แนะแนวทาง และช่วยเหลือนักเรียนในการเรียนรู้ โดยเฉพาะนักศึกษาที่ฝึกงานครั้งแรกและที่กำลังฝึกงาน อาจารย์ทั้งหมดที่สอนที่ Les Roches JinJian ต่างก็มีประสบการด้านการโรงแรมที่ต่างสาขากันไป ทำให้เราได้เรียนรู้จากประสบการตรงที่ไม่ใช่เพียงแค่ทฤษฏีอย่างเดียวเท่านั้น อีกทั้งยังเป็นประสบการจากหลายมุม จากอาจารย์ต่างๆประเทศ เช่น Chinese, French, American, German, English, Filipino, Indonesian ฯลฯ
ประทับใจเพื่อนๆในโรงเรียนไม่น้อยไปกว่าอาจารย์เช่นกัน ด้วยความที่นักเรียนมีไม่มากนักจึงทำให้มีกิจกรรมมากมายในโรงเรียน ทำให้มีโอกาศรู้จักและสนิดสนมกันเพื่อนๆมากยิ่งขึ้น ทำให้รู้สึกว่าเวลาที่อยู่ในโรงเรียนหรือในหอเหมือนอยู่ในครอบครัวเล็กๆ ทำให้ไม่เหงาไม่คิดถึงบ้านมากและทำให้เรามีกำลังใจเวลาที่เจอกับปัญหาอีกด้วย เพราะการที่ได้ใช้ชีวิตอยู่ด้วยกันและเรียนด้วยกันนั้นทำให้เกิดความผูกพันธ์ เราสนุกด้วยกัน เรียนด้วยกัน กินด้วยกัน ช่วยกันทำงาน และ อ่านหนังสือสอบจนดึกด้วยกัน ช่วงเวลาเหล่านี้ทำให้นักเรียนที่นี่กลับมาเยี่ยมโรงเรียนอีกแม้ว่าจะจบไปแล้วหรือขณะฝึกงาน
และด้วยความที่เป็นการศึกษาด้านการโรงแรมทำให้เมได้เห็นว่ามันเป็นสิ่งที่สำคัญที่สุดอย่างนึงในการสร้างหรือมีสิ่งแวดล้อมเช่นนี้ในโรงเรียนเพื่อการพัตนาทักษะและจะเป็น Network ที่ดีในอนาตค

ครั้งแรกที่ฝึกงานเมได้ทำในร้าน Chain Restaurant ที่ชื่อ “Lost Heaven Restaurant group” โดยเริ่มจากร้านอาหารไทยก่อน 2เดือนในตำแหน่ง Supervisor และด้วยความที่เป็น Chain restaurant group ทำให้มีโอกาศได้ย้ายไปเป็น Bar Supervisor ในร้านอาหาร Yunnan อีก2เดือนและ อีก2เดือนสุดท้ายย้ายกลับไปทำร้านอาหารอีกทีเป็น Restaurant Supervisor การฝึกงานครั้งแรกรวมทั้งสิ้น6เดือนเต็ม
การฝึกงานครั้งนั้นทำให้เมได้เรียนรู้สิ่งที่สำคัญที่สุดของการทำงานในด้านการโรงแรมว่าคือการบริหารคน บริหารทีม ไม่ว่าจะเป็นการ Trainบุคลากรให้เชื่อใน Brand, บริษัท หรือ องค์กรณ์ที่ทำอยู่ ความแม่นยำในการตัดสินใจขณะที่ปัญหาพุ่งเข้ามา ความรับผิดชอบต่างๆในสิ่งที่เราทำให้ได้รับมอบหมาย สิ่งเหล่านี้ทำให้เมได้เห็นความแตกต่างอย่างชัดเจนระหว่างชีวิตขณะศึกษาและขณะฝึกงาน ทำให้เมเข้าใจความหมายของการโรงแรมมากยิ่งขึ้น

ตอนนี้เมกำลังฝึกงานที่รีสอร์ตชื่อแห่งหนึ่งในเมือง Wuxi, LingShan ชื่อ DoubleTree by Hilton เป็นรีสอร์ต 5ดาวที่อยู่ในเมืองที่ขึ้นชื่อเรื่อง สามก๊ก, พระพุทธรูปที่สูงทีสุดในโลก, ทะเลสาบ “Taihu” และ ใข่มุก ครั้งนี้เป็นการฝึกงานครั้งที่2จึงได้มีโอกาสทำ Management Trainee ด้วยความที่เป็นการฝึกงานครั้งที่สองนี้เองทำให้ได้เข้าใจกว้างขึ้นและมองธุรกิดนี้ได้ชัดเจนยิ่งขึ้น ได้นำความรู้ส่วนมากจากห้องเรียนเข้ามาประยุคใช้ในการทำงานจริง โดยเฉพราะการเข้ากับคนและเข้าใจพฤติกรรมของการบริหารการจัดการมากยิ่งขึ้น ทำให้ได้มีความมั่นใจในสิ่งที่เรียนมาและ ทำให้เข้าใจในทฤษฏีที่เรียนมากยิ่งขึ้น การฝึกงานเป็นการสร้างบุคลิกอย่างนึง ซึ่งเป็นปัจจัยสำคัญอย่างนึงที่สามารถประสบความสำเร็จในกิจการโรงแรม และทำให้เราพัฒนาตัวเองในทางที่เราถนัดมากยิ่งขึ้น และผลพลอยได้ที่มีค่าที่สุดหลังการฝึกงานคือการที่เราเริ่มมีเครือข่ายเป็นของตัวเอง เริ่มรู้จักคน รู้จักการพบปะและ keep network เพราะธุรกิจโรงแรมเหมือนหนังสือพิมที่มีแต่ละหน้าเชื่อมต่อกัน เหมือนโลกขนาดเล็กที่บุคลากรรู้จักและแชร์ข้อมูลกัน
